Ingredients:
· Mutton 1kg
· Dried Kashmiri red chillies (whole) 10 to 15
· Black cardamom 3
· Green cardamom 4 to 5
· Cinnamon stick 3
· Clove 4
· Fennel powder 1 tablespoon
· Ginger powder 1 teaspoon
· Cumin 1/2 teaspoon
· Fried onion/shallot paste 3 tablespoon
· Turmeric 2 teaspoon
· Ghee 1/2 cup
· Garlic paste 1 tablespoon
· Salt as per the taste
Method
· First of all soak the dry chillies in 2 glasses of warm water and then grind them into a smooth paste and later sieve it through a fine sieve. Keep this paste aside. Now, add mutton in a cooking pot and boil it on high flame and later discard all the impurities. Now take the mutton pieces out and let the mutton stock remain in the pot.
· In another pot, add these mutton pieces, garlic paste, onion/shallot paste, fennel powder, dry ginger powder, cumin, salt and all whole spices. Mix this mixture and fry it for 2 minutes while adding hot ghee in it.. Now at this stage, add two cups of mutton stock which we had kept aside in the beginning. Also add red chilli water and mix it well.
· Cook it now on low flame until mutton turns out soft enough.. Now add a few drops of any organic red food colour and boil it for another 1-2 minutes until the gravy texture will come out smooth.
