Talbina or Barley is thought to help in the lessoning of sorrows as well as being a healing soup for those who are sick. The talbina soothes the heart of the patient and relieves him from some of his sadness.
Barley is a whole grain with a pleasant chewy texture and a slightly nutty flavor. It is also quite nutritious and rich in fiber, vitamins, and minerals, which is why it is a staple Mediterranean diet ingredient. Talbina is made with barley flour and uses honey or dates for sweetness. Barley is a good source of insoluble and soluble fiber. It is also rich in antioxidants and contains a high concentration of tocols and tocotrienols, oils, that help reduce the risk of cancer and heart diseases.
Ingredients
• Barley 100 gram
• 1 litre milk
• 1/2 cup dates
• honey
• Chopped nuts
• Green cardamom powder 1/2 teaspoon
Preparation
Wash barley well and soak for 5-6 hours. In a pan, bring milk to a boil and add the soaked barley. Stir for about 5 minutes on high heat and leave it on medium high heat until it gets into porridge form.
After every 2-minute stir it till it will come to porridge consistency. Once it is ready, add chopped and deseeded dates for sweetness.
Add chopped nuts and dry fruits of your choice, Cook for 10 more minutes. Pour the hot porridge in a bowl and finally add honey as per your taste.
Note: Barley must be tendered and milk must be reduced to a creamy yummy texture.
