Today let’s learn how to make Hand Te Kokur (Dandelion and chicken)at home.
Ingredients needed
• Chicken: 1.5 kg
• Dry Hand (dandelion): half kg
• Black cardmon: 4 to 5
• Green cardmon: 4 to 5
• Clove: 4
• Cinnemon stick: 1
• Garlic: 2 tablespoon
• Turmeric: 1 teaspoon
• Half medium size onion slices
• Water: 2 glasses
• Oil
• Salt: As per taste
Preparation
In a pot, boil Dandelion thoroughly two times till it becomes soft and its bitterness becomes less. Take out dandelion in a Stainer and discard water.
Wash dandelion under tap water thoroughly and squeeze it very well and pound in mortal and pestle. Make a paste out of it and keep it aside. Now, pound all whole spices and keep it aside.
In a pan add enough oil, once oil becomes hot, fry chicken till it turns golden brown. In another cooking pot add 2 to 3 tablespoons of oil and fry onion slices till they become golden brown.
Now add garlic and stir for a minute. Now add dandelion into it and fry until all oil will ooze out. Add Salt and all pounded spices, turmeric, fried chicken and water.
Cook on medium heat with lid on till chicken gets soft. Let water dry and you see oil on the sides. Your tasty Hand Te kokur is ready to serve.
