Nishasta (Wheat starch): Celebrating the art of traditional wheat processing for modern health

Nishasta enriches your diet with essential nutrients, while its soothing properties aid in back pain relief and skin care

Today, traditional home remedies are largely forgotten due to advancements in modern medicine and the availability of pharmaceutical products. People tend to trust medications and professional treatments more, finding them often more effective and convenient. Consequently, the importance of traditional remedies, which have been used for generations, has diminished. However, it is crucial to remember these age-old practices, as they form a valuable part of our cultural heritage. Moreover, many of these remedies offer natural solutions that can still be beneficial today.

 

Reconnecting with these traditions could provide additional health benefits and preserve our cultural history. In today’s world, dominated by advancements in science and technology, we often see a shift away from traditional practices and cultural values toward modernization. This shift is especially evident in our food and drink, where the prevalence of adulteration has become a significant concern. Adulteration not only compromises the quality and safety of what we consume but also has adverse effects on our health, leading to a range of diseases. Despite this trend, some traditional methods remain untouched by modern practices.

 

Wheat has been an integral part of the daily diet of millions of Indians for eons. Its usage in different dishes mostly involves grinded flour that may or may not contain all the three parts of a wheat kernel. One such example is the preparation of a traditional Kashmiri item known as “Nishasta (Wheat starch).” This practice, which is still performed in homes today, stands out as a testament to the enduring value of cultural heritage

 

To make Nishasta

Start by thoroughly washing the wheat to ensure it is clean and free from impurities. Transfer the washed wheat into a clay pot, as this helps maintain the traditional quality of the product. Add water to the pot and seal it tightly, allowing the wheat to soak for about 5 to 6 days, taking advantage of current weather conditions that are ideal for fermentation. After soaking, remove the wheat, which should be softened, indicating proper fermentation.

 

Finally, grind the softened wheat to achieve the desired consistency. This traditional method of preparing Nishasta not only preserves the product’s authenticity but also demonstrates how age old practices can complement contemporary advancements.

 

Nishasta, also known as wheat extract, stands out for its exceptional quality in a variety of applications due to its rich composition and versatility. This extract is derived from high-quality wheat grains, ensuring that it retains the beneficial properties and nutrients inherent to wheat.

 

In food processing, Nishasta is highly regarded for its ability to enhance texture and consistency. It is used to improve dough elasticity, which is crucial for producing superior baked goods such as bread and pastries. The extract helps in achieving a fine crumb structure and better moisture retention, which translates into a more appealing texture and extended shelf life of the products. Its natural flavor enhancing properties also contribute to a more nuanced and satisfying taste without overpowering other ingredients.

 

Health Benefits

Improves immunity, increases stamina, nurtures skin, provide a wholesome, nutrient rich diet in pregnancy, maintains muscle health, enhances cellular metabolism. In a bowl, add nishasta and water to make a smooth paste. Now add sugar and mix well again. Heat the ghee in a pan. Add nishasta paste, keep stirring and cook on low flame until it thickens and colour changes little dark brown and ghee starts to ooze out of the mixture. Add cardamom powder and dry fruits. The tasty ‘nishaste ka halwa’ is ready to eat and is best for back pain and bone health.

 

In the cosmetic industry, the quality of Nishasta is evident in its skin benefits. The extract’s moisturizing properties are highly valued in skincare products, where it helps to hydrate and soothe the skin. Its ability to improve skin elasticity and repair the skin barrier makes it a premium ingredient for high end skincare formulations.

Nishasta’s inclusion in these products reflects its efficacy in enhancing skin health and providing visible improvements in hydration and texture. Additionally, Nishasta is rich in bioactive compounds such as proteins, vitamins, and minerals. This nutritional profile makes it a valuable component in dietary supplements and health foods. The extract offers essential nutrients like B vitamins, which are vital for energy metabolism and overall health.

 

Overall, the quality of Nishasta is defined by its ability to deliver tangible benefits across various industries. Its role in enhancing food products, improving skincare formulations, and providing nutritional support highlights its exceptional versatility and effectiveness. Nishasta is a healthy and nutritious dish that is advised especially for children, mothers and old people in winters. However, it can be consumed by everyone in the family.
