How to make coconut cookies at home?

During festivals, family functions and other occasions, coconut cookies are a treat to eat. Who doesn’t love coconut cookies? I like to have it with my favourite lipton tea or Kehwa.Believe me, it is super delicious!

With the availability of selected ingredients, one can quickly bake these coconut cookies. It is super easy to make at home. If you want taste the variety, here is the easy recipe for you.

Ingredients needed

  • Desiccated coconut 100 gm
  • Sugar 200 gm
  • 4 Egg whites
  • Vanilla essence or you can take elaichi powder
  • Almonds

Preparation

  • Separate the egg yolk, take only egg white. 
  • Stir it lightly, now add sugar and mix it with a whisker.
  • After completing the mixing, add one and half teaspoon vanilla. 
  • Take a container and boil the water.
  • Then take the second bowl container and fill the already prepared mixture now and put this container on top of the first container. Stir the mixture time to time and check whether it has turned hot or not. After some time, put this bowl aside. Now add desiccatedcoconut and mix it with spoon.
  • Take a pan on the burner on a low flame to cook this coconut mixture. For about 10-15 minutes, avoid high and medium flame. It should be down on low flame until all the water gets absorbed. So put the pan down and take keep it aside for cooling purpose.
  • Take the baking tray and try to cover it with parchment paper. Now one by one take sprinkle dedicated coconut on the round-shaped biscuit dough and gently press it with finger and put one almond on it. Now place the baking tray in the middle of the preheated oven and bake it for 15-18 minutes.
  • If you like soft cookies then you can bake it for lesser time, around 15 minutes. But, if you like crispy and crunchy texture then bake it for longer around 18 minutes until the edges, of cookies have little golden brown colour. After some time your yummy crispy bakery-style coconut is ready.
