When it comes to Biryani, it is everyone’s favourite. That’s when Muradabadi Chicken Biryani enters the scene and unites all the Biryani lovers with a delicious amalgamation of spices that steals hearts away. Ingredients
• Long grain basmati rice : 1kg
• Chicken: 1.5 kg
• Roughly chopped green chillies: 12
• Green Cardamon: 9 to 10
• Bay leaf: 2
• Ginger Garlic paste: 2 teaspoon
• Mace & Nutmeg (Jaiphal & Javitri): 1/2 teaspoon
• Cloves: 6 to 7
• Whole Black Pepper: 10 to 12
• Cinnamon Sticks: 2
• Cumin: 1 teaspoon
• Coriander Powder: 1 teaspoon
• Fennel Powder: 1/4 cup
• Curd: 1 cup
• Oil: 1/2 cup
• Kewra Water: 1 teaspoon
• Salt: As per taste
• Water
• Red food colour
Method
• Wash and soak the rice for half an hour.
• Then heat oil in a cooking pot.
• Add chicken pieces, green chilli whole spices, ginger garlic paste, coriander, fennel, curd and salt cove & fry on high heat for 5-10 minutes till oil oozes out.
• Now add rice, water and mix gently. Now cover and cook on high flame till water gets absorbed.
• Now sprinkle with food colouring and again cover and cook on Dum for 10 to 15 minutes.
• After 15 minutes, turn off the flame and sprinkle kewra water and finally cover for 5 minutes. Muradabadi Biryani is ready to serve.
• Transfer it to a serving pot and enjoy the delicious biryani.
