Proteins build and repair tissues. Proteins are chains of amino acids of varying lengths. 20 amino acids take part in synthesis of proteins of which 9 are

“ essential “, meaning they must be consumed in the food. The other 11 can be made by the body. 

The portion of consumed protein that is used for building tissues reflects utility and is expressed as percentage of total protein eaten. The higher the value, the better the protein. What is not utilised is converted to glucose. 

The egg protein( including yolk) has utility of 48% and is rated the best. Protein from meat has utility of 32%. However, proteins from plant sources have a utility of only 17%. This is because, unlike the animal proteins, plant proteins don’t have the right mix of essential amino acids. 

Bottom line: consume animal protein. 83% of plant protein is converted to glucose and may contribute to insulin resistance which is the root cause of metabolic syndrome that leads to a host of serious health problems like diabetes, high blood pressure, heart disease etc.
